"Happy Easter, y'all" is the correct terminology if you are talking to an individual. Since you are addressing a multitude, you should use "Happy Easter, all y'all". Here I am a Pennsylvania born Virginian telling a native born Georgian how to speak right. Sheeesh. It must be 'cause you live in The Big City that you forgot your raisin'.
